This past week has been full of birthday celebrating for Joe’s and Grandma’s birthdays.
For Joe’s birthday, I made him an all-homemade Mexican (his favorite) dinner: pork tacos with salsa verde, pico de gallo, guacamole, and fresh tortillas. Might not sound like much, but this meal was pretty adventurous for me and included a lot of “firsts” in my cooking history:
- Cooking with tomatillos
- Using a recipe for guacamole (usually do this blindly)
- Making pico de gallo
- Making homemade tortillas (surprisingly easy. A little flour, salt, water, and shortening.)
- Cooking with pork, beyond microwavable bacon (embarrassed to admit this)
Since my grandma’s birthday is the day after Joe’s, we decided to have a get-together to celebrate both of them a couple days later. Since I had already exhausted all of my cooking efforts from the prior meal, I turned to baking instead, and we had a dessert bar. And I ate desserts ALL day long. More than usual even.
So, the moral of the story for this post is to be adventurous and try cooking or baking something new. And, don’t be afraid to spend an entire day eating only desserts. It was awesome. And now, back to tofu?





HA – Nope, I never ever did get tired of eating only desserts!! I always asked people at my checkout lane when they didn’t believe I was telling them something was good – “Would a body like this lead you astray!! – it has already been tried, tested and proven for you” I must say everything looks delicious to the kid who has been behaving since the ER – yep believe it or not Friday will be 2 weeks and I daresay I have kept being pretty good – not one candy bar or diet coke all week! No doughnuts, ice cream, cookies, etc. And no Smarties at the computer while I am reading Facebook – I just decided enough was enough – and that’s my story and I am trying to stick to it – by the way – have a couple extra desserts for me!! I hear ya! I really don’t feel well if I don’t have at least some dessert every day–ha! I should probably break that habit. I’m so impressed that you are being so healthy! That’s inspiring to me, and I need to try harder! Hope you are feeling better!
